The Pizza-Mafia

I am both amused and disturbed to read that there not only is a Pizza-Makers's Association in Italy, but that they have decided to regulate how authentic pizza is made.

One of the things I love about pizza, Italy's answer to flat-bread, is its versatility. True, I am not a fan of some of the things that Brits do to pizza (like sweet corn and tuna!), but the beauty of pizza is that it can be tailored to your specific tastes and moods. The yuppy pizza revolution has changed how many people think about this flat food, but I am still rather fond of a good Margherita pizza.

Extra tomato sauce is what makes a pizza for me. The more herbs and spices, the better, but soft dough, lots of sauce, and the mathematical minimum of cheese goes well with everything from pepperoni to artichoke hearts.

I would have to say that I am not much for the traditional pizza. I am not a big fan of marinara sauce, I tend to like the alfredo sauces much more. I have just recently discovered the yuppie pizza since my company is now their Architect. I had my doubts at first, but I really like their pizza.

Well, when I first saw your subject line, m first thought went to a book I read recently... Neal Stevenson's novel Snow Crash includes pizza mafia. I totally recommend that book, BTW, if you like cyberpunky-type stuff.
